Learn more about foodborne illnesses and what you can do to lower your chances of getting sick.<\/p>\n<h3>The Temperature &#8220;Danger Zone&#8221;<\/h3>\n<p>Bacteria grow very slowly at temperatures below 40\u00b0F, multiply rapidly between 40\u00b0F and 140\u00b0F, and are destroyed at temperatures above 140\u00b0F. The temperature range in which foodborne bacteria can grow is known as the &#8220;Danger Zone&#8221;.\u00a0 Keeping food out of this &#8220;Danger Zone&#8221; temperature range will help prevent food illness.<\/p>\n<div style=\"clear: both;\"><\/div>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-16507\" src=\"http:\/\/foodsafetytrainingcertification.com\/wp-content\/uploads\/2018\/05\/food-safety-danger-zone_large.png\" alt=\"\" width=\"1065\" height=\"538\" \/><\/p>\n<div style=\"clear: both;\"><\/div>\n<h3>Foodborne Illness Signs and Symptoms<\/h3>\n<p>Foodborne bacteria may cause foodborne illness or food poisoning. To prevent food poisoning it is recommended to:<\/p>\n<ul>\n<li><strong>Always clean<\/strong> your hands, utensils and food surfaces before using them;<\/li>\n<li><strong>Separate foods and avoid cross-contamination.<\/strong> Never store raw foods next to ready-to-eat foods;<\/li>\n<li><strong>Cook foods to a safe temperature<\/strong>. Check them using a food thermometer:\n<ul>\n<li>ground meats: 160\u00b0F<\/li>\n<li>fresh beef, veal, and lamb: 145\u00b0F (let stand 3 minutes)<\/li>\n<li>poultry: 165\u00b0F<\/li>\n<li>pork and ham: 145\u00b0F (let stand 3 minutes)<\/li>\n<li>egg dishes: 160\u00b0F, cook eggs until whites are firm<\/li>\n<li>leftover dishes and casseroles: 165\u00b0F<\/li>\n<li>fish: 145\u00b0F or flesh can come apart with a fork<\/li>\n<li>shellfish: cook until shells open on their own<\/li>\n<\/ul>\n<\/li>\n<li><strong>Refrigerate or freeze<\/strong> perishable foods within two hours since purchase or preparation;.<\/li>\n<li>Defrost food safely in the refrigerator;<\/li>\n<li>Make sure to dispose of food if you are unsure of its safety.<\/li>\n<\/ul>\n<h3>Groups Vulnerable to Foodborne Illness<\/h3>\n<p>Anyone can get a foodborne illness, but people in certain groups are more likely to get sick and to have a more serious illness.
