Windfall apples can be contaminated by manure of either cattle or deer, both carriers of <em>E. coli O157:H7<\/em>.<br \/>\nIn addition, people harvesting apples can transfer manure or other contaminates to the apples still on the tree if their hands touch the rungs of the ladder where dirty shoes or boots have been.<br \/>\nAlso, pathogen-contaminated water sources, such as wells and lakes, are sometimes inadvertently used to wash apples. Apple juice and cider that is sold refrigerated in the produce department or in the dairy case may or may not be pasteurized. Other symptoms might include <em>abdominal cramps, nausea, fever, joint\/back aches, and fatigue<\/em>.<br \/>\nWhat some people call the \u201cstomach flu\u201d may actually be a foodborne illness caused by a pathogen in the cider or juice\u00a0 (i.e., virus or bacteria).<\/p>\n<div style=\"clear: both; margin-bottom: 20px;\"><\/div>\n\t\t\t<div class=\"media-credit-container alignleft\"  style=\"max-width: 1034px\">\n\t\t\t<img loading=\"lazy\" decoding=\"async\" class=\"alignleft wp-image-18504 size-full\" src=\"http:\/\/foodsafetytrainingcertification.com\/wp-content\/uploads\/2019\/08\/foodillness_foodsafety_001_shutterstock_1322818331.jpg\" alt=\"foodillness_foodsafety\" width=\"1024\" height=\"610\" \/><span class=\"media-credit\"><a href=\"https:\/\/www.shutterstock.com\/image-vector\/gastroenteritis-viral-disease-that-caused-by-1322818331\" rel=\"nofollow\" target=\"_blank\" >Image Source: Shutterstock<\/a><\/span>\t\t<\/div>\n\t\n<div style=\"clear: both; margin-bottom: 20px;\"><\/div>\n<h3>At Risk Groups<\/h3>\n<p>Most people\u2019s immune systems can typically fight off the effects of foodborne illness, but the FDA warns that certain groups risk serious illness, or even death, from drinking untreated juices:<\/p>\n<ul>\n<li>Pregnant women;<\/li>\n<li>Infants and young children;<\/li>\n<li>Older adults;<\/li>\n<li>People taking certain kinds of medications or with immune systems weakened from medical conditions, such as diabetes, liver disease, kidney disease, organ transplants, HIV\/AIDS, or from receiving chemotherapy or radiation treatment.<\/li>\n<\/ul>\n<p>People in a vulnerable group are advised NOT to drink pasteurized juice and cider, but rather bring unpasteurized products to a boil before consuming it.<\/p>\n<div style=\"clear: both;\"><\/div>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-16962\" src=\"http:\/\/foodsafetytrainingcertification.com\/wp-content\/uploads\/2018\/10\/vulnerable_at_risk_groups_food_illness_safety.jpg\" alt=\"\" width=\"1024\" height=\"531\" \/><\/p>\n<div style=\"clear: both; margin-bottom: 20px;\"><\/div>\n<h3>Homemade Cider Food Safety Tips<\/h3>\n<p>When making homemade cider, a few simple guidelines can dramatically reduce the risks of harmful bacteria.<\/p>\n<ul>\n<li><strong>Inspection.<\/strong> Always inspect the apples and avoid using any with visible signs of decay.<\/li>\n<li><strong>Be Clean.<\/strong> Before making cider, start with clean hands, apples and equipment:\n<ul>\n<li>Wash hands with warm, soapy water for at least twenty seconds.<\/li>\n<li>Wash apples thoroughly under cool running tap water, scrubbing with a veggie brush if you have one and drying with a clean paper towel.<\/li>\n<li>Sanitize all cider-making equipment (an easy sanitizing solution is one tablespoon of bleach mixed with one gallon of water) by dipping it in the solution and air drying.<\/li>\n<\/ul>\n<\/li>\n<li><strong>Heat liquid.<\/strong> Once the apples are in the process of becoming cider, pasteurize the liquid by heating it to at least 160<strong>\u00b0 <\/strong>F for 60 seconds.<\/li>\n<li><strong>Let cool.<\/strong> Let the cider cool and always store it in the refrigerator.<\/li>\n<li><strong>Store up to 5 days.<\/strong> Cider should be used immediately and will stay good in the refrigerator for up to 5 days (and can be frozen for longer storage).<\/li>\n<\/ul>\n<h3>Summary<\/h3>\n<p>Unpasteurized apple cider and other juices can contain harmful bacteria that can make people sick.
